I've done it both ways. I have a family vacation every years with easy-to-log food, so I log. But cruise food is difficult to log. Absolutely you can eat them tomorrow. Or next week or next year. It's all calories in and calories out. It's how we got overweight in the first place. I don't move exercise calories into other days, though. I log 'em where they are. I'm low one day and over on another. It all works out in the end.

I go slow. I have 23 lbs left to lose, and I'm looking to have it done by April-ish. But if I don't make it by that date, no worries. As long as I get there sooner or later, it's good. I've lost 81 lbs, and I'm ECSTATIC with that!

A little bit of light mayo & some chopped onions.

Separate spinach and/or lettuce leaves & wrap them in layers of paper towels. I lay out a length of paper towel on my counter & then place 1 layer of leaves on it, then roll it up. Store that roll in an airtight bag in the fridge. ETA: don't wash *anything* until you are ready to eat.
