I typically eat leftovers from the night before (generally grilled chicken breast or fish with a side veggie.) Then, I add a side of spaghetti squash (baked fresh at the start of the week) with spaghetti sauce that I make once every 2 weeks and freeze in appropriate serving sizes.

Totally agree with this. If you are putting on those miles running, the best thing you can do for yourself is go to a speciality running store and have your gait assessed; it may help prolong the life of your shoes if you get the proper fit. Dailymile.com is a great place to track the miles.

I have had an ongoing battle with nighttime munchies. I've found that drinking a cup of hot tea helps or chewing gum. There are times that I just have to remove myself from the vicinity of food and just go upstairs and read or work for the night.

I hate stevia, but you may not have a problem with it (for instance, I have no problem with Splenda here and there). A lot of times when you bake, you can actually reduce the amount of sugar called for without the taste suffering (I made sugar cookies with 1/2 the sugar it called for).
