It is all semantics. A pound is a pound now matter what it is, feathers or bowling balls. The question you want to ask is which is larger by volume fat or muscle and the answer is fat. If you have 50 lbs of fat vs 50 lbs of muscle the fat would occupy much more space. Thats why fat people are BIG!

A proper diet is all about balance, and no carbs is definitely not balanced. I wouldn't do it.

Your breakfasts look too light. Try eating more calorie dense things so you're not eating large volumes but getting higher calorie counts. Whole grains especially fit this bill. A relatively small portion of beans, wholegrain rices, Oat Groats or Quinoa (two of my favorites) will give you some good calories.

I wouldn't log it as exercise. Normal walking doesn't elevate the heart rate enough to really account for any significant calorie burn. Just sitting in a chair for 5 hours will burn 250 calories.

The exact chemical reasons aren't fully understood yet, but it has to do with the hormones that regulate sleep, and hunger, that get out of balance. You can google it and read find lots of articles on it.

4-5 litres a day is considered normal when trying to lose weight. On heavy exercise days you need to increase that.

A scale is more inaccurate the closer you are to its maximum in either direction.
