I do boiled eggs, you can boil them the night before, and put them in a ziploc with some salt&pepper, or maybe celery with nut butter? Ants on a log style. I know you said no wheat but can you do oats? I made oatmeal with coconut milk and portioned it out and ate it cold , like rice pudding.
