Don't get discouraged, long term weight loss is all about slow and steady progress over months, sometimes years. Just make sure you are running a reasonable calorie deficit by tracking your food and exercise and make sure your lifestyle changes are ones you can keep doing for a long time.

I can't resist grabbing crackers or cookies so I don't keep anything like that ready to eat in my house. Don't get discouraged by the pace, losing slow and steady is the right way to keep the weight off in the long term and it helps you avoid saggy skin when you get to your final goal. You are doing this right.

Body fat % is a better measure, however BMI is super easy to measure so that's why doctors tend to prefer using that. Even at home, I find my scale to be super accurate with weight but the built body fat measurement is all over the place. Consider BMI as a good rule of thumb but not a perfect measure.

Definitely more fruits and non-starchy veg. The fiber will make you feel full. Also, 1200 Calories a day also might simply be too few Calories for you.

A lot of bitterness comes from overcooking. If you are boiling your veggies, try experimenting with shorter cook times and then flashing them into a bowl of cold water to stop the cooking. If you can get by on 2700 without feeling tired and hungry all the time, stick with it. You want a level you can stick with for a very long time. Chances are the 2700 level will lead to slower weight loss over time.

I am a veggie head too and I found my carb / fat / protein balance leaning high on the carb and low on the protein side but I have been taking a protein supplement to balance it out to the default MFP balance and that's ok for me.

Think about it this way, 2 lbs a week means a 7000 Calorie deficit per week or 1000 Calories per day. You just have to be as eat healthy consistently and work out as much as you can without causing injury. After that it's just a matter of being patient and not giving up until you hit your goal.
