You can go to the cardio section of exercise tracking and it has a listing for strength training. Just put the amount of time you strength trained for and it will give you calories burned.

Carbs make you retain water. So what you lost when you cut out the carbs was, I'm sure, water weight and then when you ate the carb it caused a weight gain. Not real weight, just water.

Cardio exercise increases your metabolism for a little while after you finish, but as you add muscle you actually burn more calories even at rest. Way more calories every day!
