Quinoa is a grain, and that's why I avoid it. I also read recently that almost all grains have gluten even if they are considered gluten free, including quinoa.

Maybe you could do metabolic testing? I had metabolic testing done at the gym. The whole point was to find out when you are burning mostly carbs for fuel. You have to run on a treadmill with a mask. You are probably on to something. It could be dairy, but also consider that the meatballs definitely had wheat in them since caterers would add that to make them go farther. So it could be a gluten issue. The elimination and reintroduction is the best way to tell short of major tests. Good luck!

I've been really on a mission lately -- no sweets! If I really feel a craving (which doesn't happen once you've been off sweets), I have some vanilla whey protein with no added sugar made like pudding. It reminds me of eating ice cream and so I'm satisfied.
