Try using spaghetti-squash. I've tried it, and it makes a good substitute if you don't like eggplant or zucchini.

My family never takes it seriously when I talk about loosing weight. The give me the whole, "your fine just the way you are" line. Or a week after I say I'm on a diet they rush to tell me I've lost weight (when I know I haven't) they mean well, but it isn't very helpful.
