Lasagna recipes with no PASTA!!??

I read somewhere about someone who made it without using the carb pasta lasagna sheets, they had a different alternative but I do not remember any ideas?

You can use zucchini in place of the pasta It adds a lot of yummy flavor to the lasagna!0

I've seen both eggplant and zuchini used. Also cottage cheese in place of ricotta but ricotta isn't that high in fat.0

I agree- I have used eggplant in the past and it comes out great. I think Ill make that for dinner tinite!!!

but the problem is, zukes are foul vegetables sent here by the debbil hisself. and eggplants aren't far behind. Slimy veggies- barf.0

Anne Burrell used butternut squash on an show of hers that I watched. The butternut squash held together better and maintained a more lasagna noodle consistency.

My son made it once for a cooking class where he used big pieces of spinach leaves instead of pasta. It sounds disgusting to me (I love the noodles) but apparently the teacher and others in the class that ate it said it was delicious. My son didn't try it though as he doesn't like spinach.0

Unrolled leeks (slit a leek along its length and separate), blanched to tenderise, can be used in place of pasta sheets0

I use wonton wrappers and make little mini lasagnas in cupcake tins. I got the recipe on this site- Lasagna Cupcakes. They're yummy :-)0

the hairy bikers did this! they used leek leaves instead of lasagne sheets. havent tried it yet as hubby thinks it will be awful but i might make two smaller ones instead!! lol.0 -
This is the Biggest Loser lasagna recipe. I usually add a bit more sauce and cheese (yum!) and it's super delish! (I've used zucchini and eggplant, both are AWESOME in this dish!)

I just looked at the calories, Biggest Loser vs. Skinny Taste, and the Biggest Loser is lower calories too. :bigsmile:0

Try using spaghetti-squash. I've tried it, and it makes a good substitute if you don't like eggplant or zucchini.0

I agree, I make it with eggplant and it's great. Or you can make a mexican-style lasagna and use tortilla shells. If you are looking for a brand of pasta though Dreamfields pasta is low carb.0

I actually just found that same recipe but I'm going to leave out the meat and use the low fat traditional prego so that I can make it tonight. It looks delicious. My son is a really picky eater so I'm going to tell him the zucchini is green pasta. lol! Let's hope that works.0
