Not eat the yolk? That's crazy talk! An egg is the perfect convenience food - all that goodness in a handy container! Your body needs fats and protein too, so why throw away the yummy stuff in the egg! And for those of you who give the yolk to your dogs, why do you think their coat looks so shiny!

I don't think that's as important nowadays, as the curing process involves less salt, but it wouldnt harm. I usually boil my gammon first, then glaze and roast, but only do it on special occasions!
