Good idea!! I was in a hurry between picking kids up for activities so I didn't have a chance to do the bacon. I got the turkey bacon pieces and my kids added it after they were done. :bigsmile:

OK, so I made more potatoes because I had smaller ones (I used about 8 smaller potatoes) and closer to a cup of milk, a cup of the Greek yogurt (I used Chobani because that's what I had), added some extra garlic powder/ black pepper. Oh my gosh!! This was AMAZING. My family loved it! The pork was so tender it just fell apart. Great for pulled pork!! My hubby added some extra Devil's Spit BBQ because he loves spicier, but my kids loved it just as is! It was amazing w/ the ultimate twice baked potatoes that I posted as well. Enjoy!!!

Bump. I made these again last night and my family LOVES them. I made 24 mini muffins this time instead of larger muffins. My hubby said they taste like the corn muffins from Cracker Barrel.
