I made a chocolate coconut *muffin* today. Here are my ingredients. I sprayed a large mug w/ olive oil Pam. I mixed all of the ingredients and let it rest a couple minutes. I think you could use another type of nut butter like soy butter instead of the peanut butter. I would just sub for the same amount, 3/4 cup.

I used one 9 x 5" pan and 2 smaller ones (I don't know the exact dimensions). It figured out to about 30 servings from what I made. (10 slices a loaf)

I just warm mine in the micro or you can stir fry w/ a little olive oil. I love bean sprouts! Also love spaghetti squash instead of pasta!

Yep, that's what I do as well. To make it, put the cocoa powder and stevia in a coffee mug. Pour the almond milk very slowly, stirring it well to make kind of a *paste* w/ the cocoa powder, then keep stirring and add the rest of the milk. I love broccoli and feta! I had a salad for lunch w/ broccoli, spinach, broccoli cole slaw, topped w/ chicken breast and feta cheese. Yum!

Instead of the cool whip, I use cottage cheese. More protein, less processed stuff. :bigsmile: Or else just try mixing the dry pudding mix into plain Greek yogurt. Yum!
