    Tried this this morning. I used a large egg and half tsp of splenda brown sugar. It was good. I think it came out a little dry though And I had it in the microwave for 90 seconds, so I added some extra margarine and splenda brown sugar and then it was super tasty. I will try messing around with the ingredients a bit because it ended up being more than I usually have for breakfast by a lot. I know I can get it down with egg beaters but I was out of that and also use applesauce. Guess I have 2 things to add to my grocery list!

    i saved this recipe a couple weeks ago, and made it for the first time Tuesday morning at work. I LOVE IT!!! i pre-measure the dry ingredients at night, then add the egg and applesauce when i get to work and in less than 2 minutes, i have a GREAT base for my overeasy egg. YUM!! Appreciate your sharing this.................

    I made a chocolate coconut *muffin* today.


    Here are my ingredients. I sprayed a large mug w/ olive oil Pam. I mixed all of the ingredients and let it rest a couple minutes. Then put it in the microwave for 2 minutes, checked it and added about 30 more seconds. It was delicious!!!



    Bobs Red Mill - Organic Coconut Flour, 2 Tbsp

    Wild Roots - 100% Natural Milled Golden Flaxseed, 2 tbsp

    Nutiva - Organic Chia Seeds, 1 tbsp (12g)

    Meijer - Great Egg Spectations Egg Product, 1/2 cup

    Hershey's - Special Dark Cocoa Powder, 1 Tablespoon

    Kroger - Flake Unsweetened Coconut--Net Carbs, 1 tbsp (15g)

    Generic - Baking Powder, (1.5 tsp)


    293 calories

    27g carb

    14g fat

    22g protein

    17g fiber

    333mg sodium

    Hey all, I am also Celiac so I make it a little different. I use

    1/4 cup bobs brown rice milled flour
    1 tsp cinnamon
    3 tsp sugar (the brown rice flour is more bitter than wheat so I adjusted to that, but you may not need quite as much depending on your tastes)
    1/2 tsp baking powder
    1 egg
    little over 1 tsp any kind of oil

    cook for 90 seconds and eat while still hot. Tastes absolutely wonderful. The storebought GF bread doesn't even come close.

    Tried this for breakfast...sooooo good!

    I added 1tbsp chocolate chips and half a mashed banana and used 2tbsp egg whites instead of the egg beaters. I also swapped 1/8tsp nutmeg for the cinnamon. Tasted like banana bread!

    I even have the ingredients on hand! I am so going to try this for breakfast tomorrow. I am diabetic, and don't necessarily eat gluten free, but I know the health benefits of flax.
