    You're using whole flaxseeds, not ground ones? Or maybe I missed something in the directions.

    I subbed brown sugar in (1tbsp), but otherwise left it alone. It was REALLY good. Next time I'll be putting in some dried berries and pine nuts as well...just because =D.

    I can't believe the breadlike texture...awesome!

    Flaxseed meal (ground). Sorry I left that point out of the recipe.

    Only problem is I've never seen or heard of ground flaxseed meal - I'll have to hunt around and see if I can spot it.
    Otherwise do you think wholemeal flour would work OK?
    Or maybe half flour/half ground oatmeal?

    CORRECTION: Make sure you use FLAXSEED MEAL. I forget to specify that in the recipe.

    Most supermarkets have ground flaxseed (meal) in the flour/baking section or in the organic foods section.

    I just tried this with a few additions/substitutions, and it was great!

    I added blueberries, banana, walnuts, sesame seeds, and chia seeds. I didn't add any sweetener (was hoping the banana would be good enough), and I used extra virgin coconut oil. It made a lot more than I thought it would!

    I used the last of my Bob's brand last night....and used my Wild Roots (Milled Golden Flaxseed) brand this morning. The Wild Roots seems to give a smoother, more 'muffin' like texture, while the Bob's brand was more like course bread.
    I just tried this with a few additions/substitutions, and it was great!

    To mine this morning, I added 1.5tbsp brown sugar instead of the splenda, a half handful of Great Value Dried Mixed Berries, half handful of pine nuts, and I also sprinkled a pinch of brown sugar across the top before tossing it in the microwave.

    Just. Plain. Wow.

    1tbsp of salted butter poked in here and there, and I ate it right out of the oversized coffee mug with a fork lol.
