    My boys are allergic to eggs so in most of my baking I use "flax eggs" - a 1:3 ratio of flax and water, simmered to an egg-like consistency. Would probably go good with all the flax already in it.

    Can I ask how replacing the egg turned out? I might make it tomorrow if I know it goes well.

    Sorry, only just saw this. It turned out fine, probably denser than egg would have been, but still tasty enough. Very flax-y, but I didn't mind. I found some locally made flax flour that I'm going to try next! (Pretty much just extra finely ground flax.)

    And for those asking about getting ground flax - you can grind your own. I have a little coffee grinder that works well!

    I wonder if I could double the oil to replace the egg to make this vegan. From other recipes I've seen, oil is a binding agent just like eggs.

    Very interesting idea!! I'm thinking I could use 2 T. coconut flour and 2 T. flaxseed... will have to try it out!

    I made it tonight! I did use 2 T. coconut flour + 2 T. ground flaxseed + 1/2 tsp. baking powder + sprinkle salt + 1 farm fresh egg. I sprayed a large coffee mug w/ Pam Olive Oil spray, microwaved about 1 min 45 seconds. Then topped it w/ 1 T. Natural PB. YUM!!!

    This is my new morning favorite. I must admit, I made it last night after dinner for a snack and split it in half with my hubby. It satisfied the snacky mood I was in, made me feel full and didn't affect my blood sugar. I did as someone suggested and filled snack bags with the pre-measured dry ingredients so it's as easy as 1-2-3. I think I will love even more in the colder weather - a warm muffin/bread in the chilly a.m. This is my new favorite............thank you!

    This is the COOLEST recipe I have seen! I emailed it to myself and I will try it tonight. I don't have any flaxseed flour, so I will be buying some on my lunch our. YAY!

    This is my new favorite recipe! I think I overcooked mine a little (90 seconds would have been better), but the flavor is awesome! I was a little leary of consuming that much flaxseed in one sitting, so I substituted half whole-wheat flour. Next I'm going to try pumpkin in place of the oil. Thank you so much for sharing this!!!

    OK, I experimented again. Made it like my protein pancakes (usually I use oatmeal or oat bran).

    2 T. coconut flour + 2 T. ground flaxseed + 1 T. cocoa powder + 1/2 tsp. double acting baking powder, mix together.
    Add in 1/2 cup egg beaters + 1 tsp. vanilla and mix well. I used a really large mug and microwaved 2 minutes, then checked and added another 30 seconds. It puffed almost like a muffin instead of bread!! Delish!!!!!!!

    OK, another successful *bread*. 2 T. coconut flour + 2 T. ground flaxseed + 1/2 tsp. double acting baking powder. Mix the dry ingredients together in large mug (sprayed w/ Pam) and then add in the 1/2 cup egg beaters. Mix really well, let sit for about a minute, then microwave a minute, check, and microwave another minute.

    It turned out very puffy and moist. I cut it in half and spread it with a laughing cow light cheese wedge. This is my fav new recipe and I will keep experimenting w/ different flavors. Thanks for sharing!!!!!!!!

    I thought about adding frozen blueberries to it. Might try that tomorrow. :) I used the recipe I posted above and added 2 T. oat bran this time. It's a very versatile and filling recipe!!

    I add frozen blueberries to my oatmeal to cook in the micro all of the time and no splatters. I guess I use a bigger bowl??
    To clean the micro easy, I just boil a mug of water (about 3 min), let it sit a few minutes, then wipe down w/ a paper towel. No mess. :bigsmile:

  • Has anyone tried substituting the egg like someone suggested for a vegan version? I'm not vegan but try to avoid eggs when and where I can as I don't really care for them and would rather use a little bit more oil or some other binding agent? I'd love to try this - sounds great by all the reviews and I really can use this as I am diabetic just as is the OP. Thanks!

    I used almond milk instead of the eggs/ egg beaters and it worked fine!! But just use a little less, I added closer to 1/3 cup instead of 1/2 cup of egg beaters.

    Yesterday, I doubled the splenda and added 1/4t of vanilla. It tasted SOOO much like french toast. Sliced it, a little SF syrup and my family were happy campers! (and my pre-teen son, never once complained that he was hungry!)
