Here's another good tip. Since measuring takes up most of the time, I prepare 5-6 zip bags with all the dry ingredients mixed up and keep them in the fridge so all I have to do is to dump it in a cup or bowl and add the wet ingredients.
My one tip is to wash the mug out immediately, or at least set it to soak. The mixture dries like cement.0 -

I tried this recipe today Loved it! I added a half of banana to it. Tastes like banana bread to me I will make in the future when I am looking for something sweet with a cup of coffee.0

This is seriously unbelievably easy & good! I *just* made it, and I still can't believe it.
I mixed the ingredients (with no modifications) in a glass bowl, nuked it for two minutes, and let it cool for another couple of minutes. The bread ended up gorgeous and about an inch or so thick. It slid cleanly right out of the bowl with a little nudge from my spatula. I cut it into four wedges as shown in the crappy cellphone photograph above.
I'm in *love* with this recipe! The taste is nutty and delicious, the texture is rustic and flax-y but the bread itself is light and airy. I can't wait to try some fun mix-ins for variety I will make this again and again and again.

CAN YOU SMELL THAT WONDERFUL AROMA???
I just tried the mug bread and thought it was great! I must admit, I was skeptical!~ I, also a diabetic, am a huge fan of Ezekiel bread and eat it every morning. I thought I would try this - simple enough. I found the flaxseed meal at my local grocery store ($2.99 for the package) and I had all the other ingredients. The muffin/bread was large enough to make 4 slices and topped each with a smidge of butter. Very tasty and nice warm. I may also try some variations!

oh my goodness! This is delicious! I subbed a few things but it turned out great! I used 1 tsp of agave nectar instead of splenda and macadamia nut oil instead of the other oil (it tastes just like butter but it's full of omega-3's and omega-6's. This will be part of my morning routine0
