I usually make a lentil or quinoa salad (cook 1 cup lentils or quinoa + chopped veggies + olive oil) that lasts me the entire week for lunch. Vegan chilli is another good option because you can freeze/re-heat as you wish.

I do! I run a lot, so I'm usually eating between 1800-2100 cals a day. Like you, I'm also focusing on health rather than weight loss. I would constantly be hungry and I would not be able to function if I was eating less than 1500 calories a day.

Alcohol when I go out.. and having the biggest sweet tooth! Only recently have I started accepting the fact that it's healthy to indulge every now and then and not deprive myself of these things.

When I crave chocolate I usually just have a cup of chocolate cheerios instead. The peanut butter ones are even better if you can get your hands on them!

I'd suggest body weight exercises then. "Toning" = strength training.

Find an activity you like to do and stick with it! There's nothing wrong with eating, it's just about choosing nutritious foods :) Think of it as a lifestyle change opposed to simply 'losing weight' or 'dieting'.

Yes nut butters are great source of healthy fats and high in calories! Peanut/Almond butters are my favourite and I usually make my own. If anything to me it sounds like you need to eat more, eating under 1200 calories a day is too low and can lower your metabolism because your body will go into starvation mode and hold onto whatever fat is has stored for energy. Also, it's great that you're running 5k 2-3 times a week but I would add a couple more exercise…

If you enjoyed running stick with it! Sure races are fun, but you can still set running goals for yourself without having to participate in actual races.

I find exercise in itself fun, but music definitely makes it better! Also switching up my routines constantly (new running routes, different circuit exercises) helps to keep things interesting as well.
