I use ground almonds most of the time, plus put dessicated coconut in the food processor. recently I used both ground almond and dessicated coconut (separately) to make milk, then dried out the fibres for flour - works pretty well and you get some cheap coconut milk for smoothies etc. They do sell coconut flour in Holland…

Peel, chop and roast or chop in half, deseed and roast my two favs. they are great in a curry too. A thin sharp knife makes light work of it.

I'm a big fan of the breakfast omelette/ frittata - its flexible so just add whatever veggies and meat you like.
