  • I love lentil soup like you get in Middle Eastern restaurants, especially with lots of lemon. I found this recipe on Pinterest and have made it several times. It also freezes really well. http://www.marcussamuelsson.com/recipe/lemon-lentil-soup-recipe
  • I wouldn't trade my omnivore husband for all the vegan guys in the world. :) I am pretty lucky... he eats just about everything I cook, and since I love cooking, it works out for us. He eats meat when we go out or visit family, and on occasion cooks it at home for himself. But there's a lot more to our relationship than…
  • Veg*n refers to vegan and/or vegetarian
  • I have been a vegetarian for 15 years and people still ask, especially older people. One older woman once accidentally referred to me as "vegetation" instead of "vegetarian" LOL!
  • I made some Vegetarian Quinoa Chili tonight and it was delicious! I used this recipe: http://www.twopeasandtheirpod.com/vegetarian-quinoa-chili/, and also added a can of corn. It came out to 171 calories per 1 cup serving, and made 14 cups.
  • I know what jandals are!!! :) :) :) I live in the US but my cousins live in NZ. As for tanning, my Irish/Scottish/English skin prefers to be in its natural, pasty white state. When I was in my early teens I loved to try to tan but ended up with many sunburns. I've embraced my white skin and now wear sunscreen whenever I'm…
  • I was also going to suggest this. I have used my food processor before to blend cottage cheese for a spinach artichoke dip and it worked great! It's more of a sour cream/cream cheese texture that way, and you can use it to substitute for these items as well.
  • These look awesome, and so many vegetarian options! Thanks for posting!
  • Sorry, I don't have any to add, but I'm saving this great list for later!
  • Quinoa - cheaper than I've seen at any other grocery store Kirkland dried cherries Babybel Light cheese Used to buy hummus, but now I just make my own Pecans Speedo swimsuit for my water aerobics class for only like $20
  • Wow, you have SUCH a positive attitude for having such a terrible sounding mother! Seriously, she has issues if she tried to make an 8-9-13 year old feel self conscious about her body. I was super embarrassed and hated myself when the bank teller asked me once if I was expecting and I most definitely was not. :( Just today…
  • All meat (including beef, pork, poultry, fish, seafood, etc) - not just the taste but also the smell of it cooking makes me nauseous, or even just looking at it when it is raw and/or bloody Mushrooms - I totally agree with the person who says "It's a FUNGUS!" Kimchi - I can't handle the smell or taste Cilantro - All I…
  • I am a vegetarian and my husband is not. Thankfully, he eats almost anything. I am usually the one who cooks in our house (99% of the time), so most of the time he eats vegetarian with me. When we go out he eats meat, and he usually buys some sort of chicken or beef easy frozen entree type things at Trader Joe's that he…
  • I LOVED my Vidalia Chop Wizard! I received it as a gift in 2007 and it finally wore out last year. I used it constantly - made very short work of homemade salsa, and veggies for salads and soups. I usually cut onions into 6 wedges to get it to go through the Chop Wizard easily. The plastic hinge part eventually broke on…
  • I LOVE kitchen gadgets! My favorites: KitchenAid stand mixer, Cuisinart food processor, Oster electric steamer, toaster oven, Vidalia Chop Wizard (AWESOME!), enameled cast iron dutch oven, a good set of knives, and a super cute lime green garlic press that I use all the time.
  • The biggest thing that affects the food budget in our house is planning ahead. If we don't have a meal plan, we end up relying on convenience products, which are usually expensive or unhealthy. I would also advise dried beans, lentils, and eggs. Only buy in bulk (large quantities) if you can eat it all before it goes bad.…
  • That response seemed a little snarky... did you watch the movie? It discusses the Roundup-ready soybeans by Monsanto and the lengths to which the company will go in order to protect their "intellectual property" by taking down small farmers. When "keeping farming effective" means relying on monocrops instead of…

  • I am also a vegetarian and I'd love to see others' food diaries and get new ideas for myself. Friend request sent! :) (Anyone else... feel free to add me!)
  • I have been a vegetarian for 15 years, and have been aware of the factory farming/meat issues, but one new thing I learned from the movie were the fact that almost ALL (91% I believe) of soybeans grown in the US are genetically modified! As a result, I have cut down my intake of soy products. It was very eye opening to see…

  • I know this is an old thread, but I also have a steamer (Oster electric with 3 baskets) and I'm looking for recipes for it! How long do eggs take to hard boil in the steamer? Anyone else have any great steamer recipes?
  • I love quinoa! Here are a couple of recipes that I love, and are often requested for family holidays and dinner parties with friends: Roasted Butternut Squash and Quinoa Salad (from Inn Season restaurant in Royal Oak, MI) 4 cups cooked quinoa 2 cups cubed winter squash, such as butternut (I double this, plus the…
  • I wholeheartedly agree! I've had some 40 year aged balsamics that I could literally drink with a straw because they were so delicious. However, if you're looking for a ranch-type dressing, I would mix one up using greek yogurt or silken tofu as the base, and add the herbs and spices you like. Mix in a food processor or…
  • I also make all of my own salad dressings. They taste delicious, and don't have all the chemicals and HFCS found in conventional bottled dressings. My hands down favorite salad dressing is a Creamy Lemon Basil dressing I've tweaked to be very similar to a salad I love at 310 Firefly Cafe in Traverse City, MI. I can't wait…
  • I am also vegetarian, and I also don't do mushrooms, and don't eat much tofu. I would love to see your menus! Feel free to add me and check out my food diary. I posted several salads in a vegetarian lunch idea thread. I will post some other recipes later when I get home.
  • I love squash, I'll have to try this sometime! Here's my favorite recipe using winter squash. I used butternut but you could use whatever you have, since it sounds like you have an abundance! Roasted Butternut Squash and Quinoa Salad (from Inn Season restaurant in Royal Oak, MI) 4 cups cooked quinoa 2 cups cubed winter…
  • I ADORE roasted vegetables, of any type! Don't forget about beets - they are awesome roasted. I wash them (leave skin on), toss with olive oil, salt, and pepper, then wrap them individually with aluminum foil. Roast at 400 for about an hour (more if they are really large), until fork tender, and after they cool a bit you…
  • I also love balsamic and now I'm dreaming of a caprese salad (tomatoes, fresh mozzarella, fresh basil, olive oil, balsamic, salt, and pepper). Can't wait for summer and its ripe, homegrown tomatoes! I refuse to eat tasteless, pathetic, winter tomatoes. I also love a balsamic reduction on grilled peaches.
  • Ditto here, except I don't have a son. I am very fortunate that my husband eats just about anything, but he does occasionally make meat for himself, and whenever we go out to eat or eat with family he eats meat. I'm always looking for new vegetarian recipes that are omnivore-pleasing as well. Feel free to add me!
  • This is a great thread! I have been a lacto-ovo vegetarian for 15 years and am always looking for new lunch ideas. I am not a morning person, so I try to make my lunches the night before. A couple of my favorite lunches: - Roasted beet and quinoa salad. I roast a bunch of beets at once with a little olive oil, salt, and…
  • Yes, this! The recipes in this cookbook have long ingredient lists, but I've loved everything I've made from it. Also, I would recommend the Moosewood/ Mollie Katzen cookbooks. I have Enchanted Broccoli Forrest, Simple Suppers, and Cooking for Health from the Moosewood series. I do use online sources (epicurious,…
