I like to scramble them with some salsa and shredded sharp cheddar, then roll into a tortilla as a burrito, or brown the tortilla (fillings folded inside) in a skillet for a quesadilla. I typically do 1 whole egg and 2-3 egg whites. I also like them hard boiled, with the yolk replaced with hummus. Yum!
