I think the biggest thing to consider is the race support. I'm signed up for the new IM Canada Whistler. My First. But I did Lake Steven IM brand 70.3 and a non-IM brand 70.3 this year. So i did a quick calorie count on the muffins. if you use skippy reduced fat, and you make 18 muffins: 170 a muffin. I also added a splash of milk cuz the batter was just too sticky! I've made something very similar... mayo creeps me out for some reason, so I'll do half light sour cream and half light mayo and it's still really good. not sure which is better for you tho, mayo or sour cream, but the sour cream has a better texture i think.
