The consistency is a little different in these pancakes due to the egg whites, so be prepared for that. You most certainly can! There's protein in the yolks as well. I would limit it to just 1 yolk and maybe 2 egg whites though. There's also cholesterol and fat in the yolks. They aren't as bad as once thought though, so go ahead and toss one in!
