I, like many others, find it hilarious that you went to NYC (arguably the restaurant capitol of the universe) and chose to eat at crappy restaurants that are prolific all over the world (Fail #1) and then post about said high caloric, nutritionally void meals on a fitness/diet website (Fail #2).

n-6 to n-3 ratio gets blown out of the water if all you consume are plant lipids. That's not a good thing. As far as things you've said that are incorrect or woefully outdated... where do I start? How about an easy one first- olive oil is 149% fat. Think about it.

I don't think you need to be killing the swim days. Ideally, if you could do 5 days a week with a long run, intervals, tempo, and 2 recovery runs, then you could swim on the other two days.

Nope, as long as you can handle it, you can run 5, 6, or 7 times a week if you want. Just listen to your body for signs of over training, it knows best. For the long run, you are doing them right already. Nice and easy. You can pretty much think of any run that isn't a speed workout as an easy pace run.

I should add... the first thing you really should do is build up your base. You seem to be running around 15 miles a week. Obviously everybody is different, but IMO that's not enough to sustain 3 quality workouts. (Tempo, Interval, Long). As of now, I'm running 30-35 miles a week, but keeping it steady there. Due to the weather of where I live, there are no marathons I can participate in until late fall, but I like to keep that amount of base throughout the year.
