  • Just did close to the same thing, except made muffins instead. By making them smaller, I could get 24 out of the recipe. I put them in baggies & freeze them, then I can just add one to my lunch for work, or nuke one for breakfast. LOVE banana bread/muffins :)

  • Have you tried getting the sugar-free mix & then making it with fat-free milk? Just don't use soy milk - it won't set. Good luck!
