Pasta has always been my biggest weakness. I'm afraid of it now, because once I start - I can't turn off the switch. Haven't found a suitable substitute. I constantly battle the urge to eat the mac & cheese that my 4 year old leaves on his plate. Occasionally, I eat some low carb ice cream or fruit or slice of bread. I…

I eat a lot of chili - make about six 2-cup servings at a time. I use 2 lbs ground turkey (less calorie than beef). Depending on your carb allowance, some quantity of black beans, onion, chopped tomato (I used canned), canned chipotle peppers in adobo sauce (a critical ingredient - smoky & delicious!), cumin, cinnamon,…

I'm a late bloomer - I met my wife when I was 42 and I got married (for the first time) at age 47. Now, at age 54, I weigh 20 lbs less than when we first met. Although I have about 5 more lbs to lose, my wife tells me that I'm now too thin, and I need to stop all this dieting. She also makes comments like, "you're now…

My first ~5 months of LCHF actually increased my total cholesterol and my (Total/HDL) ratio. I was disappointed - but was told to have faith & stay the course and re-measure. Just got new numbers today. Its now been 8 months of LCHF, my cholesterol ratio is finally normal, better in fact than it was years ago when I was…

I originally thought the blender might break the seeds and produce a smother texture. However the seeds seem pretty solid, and don't seem affected much by the blender. I use the blender just to mix well & avoid lumps. Simply stirring won't blend the thick coconut cream into the almond milk. Putting in a sealed container…

Honey is sugar/fructose - which I would avoid. I've had good luck with the liquid sucralose, which I buy from Amazon. Tastes good, doesn't spike my blood sugar. I use it regularly to to sweeten my chia pudding. Recently tried Truvia, but it doesn't agree with my stomach. I had better luck with pure erythritol (also from…

DAN! Looks like you're having a GREAT time - enjoy it! And - you look great too.

I'm so glad I discovered chia pudding - I have it several times a week - it is my primary treat. I use 1/4 cup of heavy coconut cream (Trader Joe's), 1.75 cup of either almond milk or low-carb dairy milk (Fairlife), 2 Tbsp cocoa powder, a teaspoon of coconut extract, and 5-6 drops of liquid sucralose & 1/3 cup of chia…

Time for a new doctor - soon! I'd say an A1C of 6.6 is serious and time for LCHF and exercise!! If fear of diabetes isn't enough to get him going - then ......

If the calories in your BPC are less than the meal its replacing - it will help you lose weight.

My T1D friend suggested checking out Dr. Bernstein's low-carb treatment of T1D. This doctor is a T1D himself. http://www.diabetes-book.com/video-dr-bernsteins-diabetes-university/

Dan - I really appreciate the effort you're making in giving us all a virtual trip to China with you! The sights, the food, the exercise - it all sounds great!

Yes - insulin resistance seems to be the root of many evils. I really enjoyed watching & reading Dr. Jason Fung, both on dietdoctor.com and on Dr. Fung's site: https://intensivedietarymanagement.com. The take-home message from Dr. Fung is that sugar consumption is the primary cause of insulin resistance. T2 diabetes was…

I lost 22 lbs over 5 months. The final 4 months were on moderately low carb (~80-110 grams total carbs / day). The good news is that my A1C is now no longer in pre-T2D territory. However my LDL got worse. I've also read that LDL measurement is less meaningful while weight is decreasing. My doc said I could stay off statins…

Finished my first month with intermittent fasting (36-60 hour weekly fasts), yes, it CAN be done, and it increased my typical weight loss from 4 to 6 lbs per month. My weight is at a 12 year low, I feel great, and I'm just 2 lbs away from a 20 year low.

Favorites: grate half a zucchini, sauté in butter (along with onion), then add eggs & parmesan for morning omelet. Bake cauliflower, cheddar & sour cream for great mac'Ncheese substitute. Roast brussel sprouts with olive oil salt & favorite seasoning until crispy on the outside. Cut eggplant in half, broil skin side up…

I've been fasting 36-60 hours, with BPC, broth & tea, once per week this month. When extended fasting - the 2nd day was easier than the first. The added weight loss was smaller than I was hoping though - instead of losing 4 lbs this month - I lost 6 lbs. Was the 2 extra lbs worth it? I'm leaning toward 'yes'. Mostly - I…

Well done!

@toadqueen : Wow - great & inspirational story about your journey & success! Thank goodness you finally found the right information despite all that BS you were told initially. I was lucky to discover my rising A1C very early, and reduced it from 5.8 to 5.4 in the last 5 months by simply going moderate low carb, ~75-100…

I really like the Pap's Pitmasters Barbecue. Spicy, not too sweet, available on Amazon. Its drier than the sweeter jerkys I've tried. Less than half the carbs of the jerky I was buying at Trader Joe's.

My total carbs are in the 70-110 range, so net is about 40-90. I'm able to maintain ~4-5 lb loss per month at this level. When my loss stalls out, I may try to lower my carbs further.

Gave my insulin system a good long rest by completing my first 60 hour fast (with BPC, tea & broth). A month ago, I wouldn't have thought this was possible. Inspired by some folks in this group, and also Dr. Jason Fung. Got in over 3 hours of brisk walks while fasted for increased fat burning. Some hunger on the first day,…

I checked this recipe, and it comes out to more than 1000 calories per serving. That puts it out of my range. With some tweaks, it does fit in my budget.

Wow - that's a must try! Thanks for sharing!

You are inspiring me Kitnthecat! Others around me express concern and encourage me to keep my fasts short. But I'm going to try a longer one. Thanks for your report!

Keto range is generally considered 50 grams of carbs per day or less. Some are quite strict (like our friend Radiii) and keep to 15-30 grams. But 100 grams/day is also considered low carb. I've been eating ~100grams/day for a few month and getting decent results (blood glucose never exceeding 140 mg/dl, and losing 4-5…

I ended my weekly fast yesterday after 46 hours when I had a close unexpected encounter with an Indian buffet, and felt I deserved it. Really wasn't that hungry and could have gone longer. It's really amazing, that I feel most hungry at the 24 hour mark. When I wake up the next morning at the 36 hour mark, hunger is gone &…
