You might be eating too little. It looks like you are barely eating over a thousand calories. Your body can go into starvation mode and hang onto everything it gets when that happens. Just a thought.

3x per week is good for starting. If you want to work out more you should probably switch to a different type of cardio that isn't as tough on your legs. After you're used to 3x, then it wouldn't hurt to add another day.

Have you measured inches? The scale may not change as much as you expect because muscle weighs more than fat. Measuring would be a better way to see results I think. Good luck on your triathlon!
