I count just plain water as my eight glasses of water a day. I used to have difficulty drinking all eight glasses in the day but the past few days I've filled a two liter pitcher with water and kept it with me, refilling my glass. I've been drinking all eight glasses before dinner now!

I smash chickpeas, mix them with a vegan mayonnaise and dill relish, and put it on bread to make a vegetarian "tuna" sandwich. It's really good if you like that sort of thing and very easy to make!
