I weigh everyday for the purpose of getting weekly and monthly averages. I don't care too much about the fluctuations. Most of the time its just 1-2lbs fluctuations.

Its an electrolyte. It does a lot of things like move water and fluids within the body and contracting muscle. If you're eating mostly whole foods, drinking enough water, not adding tons of salt to your foods, not having any sodium related health issues, you have nothing to worry about.

I like having diet sodas occasionally. The regular ones are waste of calories in my opinion.

What it means to most people is probably eating mostly whole, minimally processed foods. To me, clean eating is not a very quantifiable concept as the meaning can vary.
