Haven't met my target today

I just completed my first bit of exercise since having my son 15.5 months ago! I do walk but I'm talking cardio like running, Zumba etc. I'm doing the c25k and I feel fine after. I have just started a good diary with Fitbit and mfp. I am having way to many carbs. Today for example, I had cheerios for breakfast, some soup with a bit of bagette and I'm having beef meatballs with pasta tonight. Can anyone recommend anything to help me get my carbs down? Any alternatives?
