Here's a question or challenge..how do you mantain a healthy eating habit while working approximately 30hrs in a week spread out and going to college in the mornings and the rest of spare days work at being a mom/teacher/cleaning house person/cook for family person ????? I love mexican food and i find it extremly satisfying! However that being said, mexican food sometimes tends to be on the high calories side. Anyone have any ideas into making delicious mexican food in a healthier way?

I need plenty of ideas on how to prepare simple yet satifying meals as the typical life for a college student is being summersed into school and having a job. I need to know these so i don't fall back on ordering fattening food that only fuels my cravings. Help please!
