I made it through Canadian Thanksgiving!

Well, we just had our annual big supper and I made it and managed to stay low carb! I offered to make the spinach salad (with bacon, egg, mushroom and sugar-free dressing) and of course, there was turkey and ham and I stuck to those two dishes and I'm laughing! Yum!

    good job. holiday and celebratory get togethers can be tough....off plan foods, peer pressure and the like. good for you!

    That's awesome. I've already been thinking about the American Thanksgiving and figuring out substitutions. My problem will be the stuffing. I make really excellent stuffing and the thought of not eating it makes me sad. Maybe for that day I can use a low carb bread?

    "low carb bread" is still flour.

    Like you, homemade stuffing is our highpoint of T-day and this being our first LC holiday we've been thinking about how to handle it.

    Pizza is our other "don't think we can live without our fix" food.

    We recently (twice now) made Almond flour pizza dough and it was awesome. Both taste wise and as an acceptable substitute for the "real thing". That's what we will be using for the crumbs in our dressing.

    I feel for you Lula. I too make a fab dressing/stuffing. I may still be making it, just for everyone else...not me. We are flying to mom's for Turkey day this year. My daughter and sister and I are trying to come up with a different menu style than the usual....maybe a couple of courses, versus buffet (portion control), trying to deconstruct a couple of recipes...etc. I offered to cook mom a Turduckhen, but she wasn't biting...(no pun intended). I made one for a cajun themed thanksgiving one year...omg it was awesome. Ordered it from new orleans. The shipping was more than the bird.

    When i get a hankerin' for pizza i thick slice eggplant or zucchini and slap my toppings on and throw it under the broiler. Even that man i married likes that!

    You are absolutely right and I don't plan to go back to wheat flour products since I've now learned that they make me feel sick. I will try an almond recipe beforehand and hopefully it can work for the stuffing.
