Easy Yummy Portable Breakfast

Hi all: looking for a way to use up those last few veggies in the fridge so they don't end up in the trash? Here's a great recipe for a yummy, high-protein breakfast you and the kids can grab as you head out the door! Egg Muffin Bites!
You need 11 eggs and a 12-ct muffin baking pan, lightly sprayed with cooking spray. Then look at what you have in the fridge: leftover bell peppers, cooked spinach, broccoli florets, that last wrinkly zucchini? Do you have a few leftover slices of Canadian bacon or sausages from dinner? Or add your own fresh ingredients: mushrooms or that last bunch of kale can be easily and quickly cooked down in a pan with a drizzle of oil and some S&P. Take these ingredients and put a dollop in each muffin cup.
Once you have your ingredients, just beat 11 eggs in a bowl. Add S&P to taste. Pour the eggs in each muffin cup over your extra ingredients, just below the top. Sprinkle a bit of grated Parmesan on the top and back at 350 for 30 minutes. When done, they should be puffed up like muffins!
