Friday night - Date Night!

In our previous life (BR....Before Retirement), Friday night began and ended about 15 minutes after we got home from work, 7 pm or so. Burnt out, lights out, asleep on the couch.

Tonight went a little different with my first wife at my side. Nowadays, unless we look at a calendar, pretty much any night of the week might be Friday night.

Homemade LC pizza (almond flour and mozzarella crust), a salad, and a glass (ok, maybe 2), of the grape.

After the dishes we threw together our first attempt at homemade, LC vanilla ice cream (Peter Atilla's recipe....awesome).

Stuck it in the freezer to set and jumped in the hot tub.

My smart, witty, sexy, and newly svelte bride, and her not quite there yet husband, BAN in the tub under the stars with not a care in the world beyond how long it might take for the ice cream to "set".

Except.......went over my cals by 180 and carbs by 5....I'm bad, I know <G>

Someone wanna tell me again why I'm going to be bored in retirement (and when that's going to begin)?

Much of the "golden years" bull you've been told is just that - BS, but it need not ALL be.

Meanwhile, 2 more kids dead today in a WA high school and 2 on the cusp......sure puts a damper on what should have been a nice night.

    You are so right about the Golden Years being BS. Sounds like you and your bried had a great night. Pizza sounds gooddddd!!!! Bad news in headlines everyday! There are bad people out there. How did the ice cream turn out? I see you went a little over in your counts. That's ok, you were having a good time.

    Ice Cream was awesome (at least according to Bride #1), she's the connoisseur (or is it connoisseur-ette?). Next time a little less almond extract (that's a good thing since it's about 10X more expensive) and a little more vanilla.

    Pizza is her (well, "our") biggest hurdle since we were (in our previous lifetime) at least 2/week addicts. We've tried almost all of the "carb friendly" versions and while "ok", it just never was the "same". The almond flour/mozzarella crust though, is a keeper.

    As to the macro counts - I try to keep them "close", especially carbs. Keep fat as high as I possibly can and don't worry too much about protein although it's a challenge to keep it down where I want it. Don't pay much attention to cals since I usually don't "feel like" eating more than number used to calculate macro %'s.

    Mine is not a "unique" situation as you'll see with many other posters here and it will "happen" for you as well with time - as long as you stick with it the best you can.

    Like most things, there is a learning curve and even a few days where one ask's "is it really worth the (fill in the blank)"

    It IS (worth it), and once you hit the upside of the curve I'm betting you'll agree.

    I sure hope so. I am learning new things every day. I looked at what you eat and was very impressed and it has given me some ideas to try. I read in Woman's World this morning about Thyroid and protein. It says, Why does extra protein help? Folks who get more protein get more of a nutrient called tyrosine, which the body needs to make thyroid hormone, say experts. Plus, increasing usually means decreasing carbs-so you get less gluten, a sticky substance in wheat increasingly thought to suppress thyroid function.

    Maybe, this is why my doctor has my protein higher because I have thyroid problems?? When I see him 11/7/14, I am going to ask him about it.

    I am going to start using coconut oil as a fat. I have heard a lot of good things about it.

    I found a breakfast sorta recipe that looks good I want to try.
    Omelet made with 1 egg, 3 egg whites, 3 Tbs. cheese
    3/4 cup steamed chopped vegetables (such as spinach, onion, broccoli)
    prepared in 1 Tbs. coconut oil.

    What do you think about this breakfast idea? I was wondering should I use whole eggs instead of the egg whites?? Also, I had bought some coconut oil that is solid in a jar? Do they make just reg. coconut oil and if so which do you think is best to use?

    My bride has been on hashimodo meds for years and prior to her starting LCHF 7 months ago almost every annual check up resulted in an increased dose

    Since beginning LCHF her doc has CUT the level in HALF now three times (and shortened the interval between blood workups because he's concerned that it might still be TOO HIGH.

    Anecdotal and "study" population of just one, but that doesn't mean the results are not significant, just that one must take them for what they are. Whether it applies to your particular set of circumstances or not, we can't say.

    One the omelette my "base" is 2 WHOLE eggs (the yolks are where the really "good" stuff lives, don't understand why anyone would leave them out - except of course for the "cholesterol" fear mongering which is BS),
    1 cup of (raw) spinach (throw it on top before folding the omelette so it sort of "cooks", a little)
    Whatever spices I feel like in the moment.
    Then I add (again, depends on the mood)
    1 slice of "ultrathin" cheese, or 2 Tbs Sour Cream
    Some kind of meat - sliced pepperoni, sausage, left over hamburger, etc
    Sub mushrooms, onion, somedays

    Depending on the "mix" on any given day it usually runs in the order of 4-500 cals, 2 or 3 carbs, 70-75% fat, and 20-25% protein.

    Quick and easy and changing up the ingredients provides enough "variety" but makes daily logging simple.

    On the carbs/protein thing, I don't think it's that "increasing protein usually means decreasing carbs which....." but rather that increasing protein usually means Decreasing fat which (usually) is counterproductive.
