Gaining weight with limited diet. Help!

I'm struggling with severe IBS and lactose intolerance, and attempting to follow an extremely limited diet (using the FODMAP diet). Most foods cause severe abdominal pain, bloating, and cramps that last for days; leaving me uninterested and unmotivated in eating as much as I should, leaving me at an uncomfortably low weight (between 110-116) at 5' 7". I am left to eat wheat-free, dairy-free, and gluten-free, while also taking out many various fruits, vegetables, and seasonings due to my stomach's negative reactions to these foods. I realize not everyone is as limited, but any and all tips/support would be of great help. --Thank you:)

    I supplement with hydrochloric acid and digestive enzymes and so on. It helps a lot with the bloating after meals. I also took strong oregano oil capsules to get rid of SIBO.
