Fried Egg rice

Options
I made this yesterday and it's around 230 calories. Its a great healthy and tasty meal!

Ingredients :

sea salt and freshly ground black pepper
250g long-grain or basmati rice
50g frozen vegetable mix ( peas and carrots)
20 g of Squash
2 cloves of garlic
1 fresh red chilli
a small bunch of spring onions
2 large eggs
2 tablespoons soy sauce
sesame oil
Method:

1. Bring a pan of salted water to the boil, add the rice and cook according to the packet instructions

2. Drain the rice in a sieve, run it under a cold tap to cool, then allow to dry out in the fridge

3. Peel and finely slice the garlic cloves . Finely chop the chilli. Finely slice the spring onions. Finely slice the squash.

4. Crack the eggs into a small bowl and beat well . Add salt and pepper to the eggs .

5. Preheat a wok or large frying pan on a high heat and once it’s very, very hot add a good lug of olive oil and swirl it around.

6. Add the frozen vegetable mix , garlic , chilli , spring onions , squash in the wok .

7. Stir-fry for 1 to 2 minutes then add the cooled rice,

8. Keep stirring and frying for 5 minutes until the rice is warmed through, then add the eggs

9. Keep stirring and when the rice is steaming hot and the egg is cooked into strands going through the rice, add a few splashes of soy sauce and a couple of lugs of sesame oil.

10. Mix well and then serve in a bowl with chopsticks (optional)
