Sweet and creamy spinach-mushroom-onion delight

I use these sauteed onions and mushrooms to add flavor to boring veggies, rice, meats, etc. In this case I mixed it with some Birdseye creamed spinach, then put a small dab of Opa greek yogurt blue cheese dressing on the side (optional). Best spinach dish I've ever had!

1.00 onion, Onions - Sweet, raw
1.00 tbsp(s), Extra Virgin Olive Oil
3.00 tbsp(s), Red Wine Vinegar
1.00 tbsp(s), Honey
10.00 large, Mushrooms - Raw
1.33 container (1 cup ea.), Frozen Creamed Spinach
3.00 Tbsp, Greek Yogurt Blue Cheese Dressing
Warm the oil in a large frying pan or Wok. add the onions, cover and cook until semi-soft. Add the mushrooms. (you can also add roasted garlic if you have it on hand. Continue to stir so they all brown evenly. Add the red wine vinegar (I used pomegranate red wine vinegar). When the onions are cooked to your preference, add the honey and blend. Meanwhile, microwave the bag of Birdseye steamer creamed spinach according to instructions on the bag. Mix as much of the onions and mushrooms to the spinach as you like. I put a dab of the blue cheese next to it and dipped my forkful of spinach into the dressing.

Oops, I didn't get the right package of spinach . Also, this made a lot, so I increased the serving quantity, which brought down the calories.
