I know a few people are doing low carb so I want to share this casserole. Its the next best thing to potatoes.
2 1/2 cups cook cauliflower ( I use frozen cauliflower and steam it )
1 cup low fat sour cream ( I have also used plain yogurt and its good)
3/4 cup cheddar cheese ( I use jalapeno yogurt cheese)
3 green onions
salt & pepper to taste
chop cooked cauliflower in small pieces. In a casserole dish, combine cauliflower, sour cream, 1/2 of the cheese, green onions salt & pepper. Mix. bake 350 degrees uncovered for 25 minutes (if it looks watery due to the water content in the cauliflower, bake a little longer. The last 5 minutes sprinkle the remaining cheese on top. My husband likes me to turn on the broiler for a few minuted to get the top brown. I like it both ways.

Do you mash the cooked cauliflower or just leave it whole and mix with the sour cream? Sounds yummy!!!0

Thanks..........I'll give it a try. Hmmmm, the bacon sounds yummy and you wouldn't need much to give it the flavor.0
