Want to share a really good cauliflower casserole.

I know a few people are doing low carb so I want to share this casserole. Its the next best thing to potatoes.
2 1/2 cups cook cauliflower ( I use frozen cauliflower and steam it )
1 cup low fat sour cream ( I have also used plain yogurt and its good)
3/4 cup cheddar cheese ( I use jalapeno yogurt cheese)
3 green onions
salt & pepper to taste

chop cooked cauliflower in small pieces. In a casserole dish, combine cauliflower, sour cream, 1/2 of the cheese, green onions salt & pepper. Mix. bake 350 degrees uncovered for 25 minutes (if it looks watery due to the water content in the cauliflower, bake a little longer. The last 5 minutes sprinkle the remaining cheese on top. My husband likes me to turn on the broiler for a few minuted to get the top brown. I like it both ways.

    No I didn't add it. Im never exact on how much cheese I add so I measure it each time.

    I love cauli now and use it instead of potatoes. Baked cauli in pork fat (lard) is amazing!

    Do you mash the cooked cauliflower or just leave it whole and mix with the sour cream? Sounds yummy!!!

    I mash it after I steam it. I recently started adding hot peppers to it to give it a kick. I know a few people who like bacon in it.

    Thanks..........I'll give it a try. Hmmmm, the bacon sounds yummy and you wouldn't need much to give it the flavor.
