GIANT swiss chard!! Check this out!

I made a post about this in the regular forum, but I thought you ETL fans would especially appreciate this.

A friend gave me some swiss chard the other day. I had no idea it was some sort of GIANT variety until I picked it up....HOLY COW!! She gave us like 6 of these leaves!!

I think I am going to make an eggplant, swiss chard lasagna tonight!

    You can use it just like any swiss chard. I trimmed off the large stems and am keeping those to use in soup sort of like you would celery. But so far I have made stir fry with it and it was good and last night I made a sheperds pie out of it. I didn't take a pic of the stir fry, but here is a pic of the sheperds pie. Based on the recommendation of a website I like (worlds healthiest foods) I boiled the chard to reduce the oxalates and acids (chard is one of the very few veggies they recommend boiling). Then I drained and put it in a baking pan with peas and corn and topped it with mashed cauliflower that had tons of garlic in it. Topped with a little parmesan and baked it for 20 mins. I was hoping to brown the cauliflower, but it didn't brown and I got hungry :)

    I believe this Swiss Chard is the giant variety called Fordhook.

    I made noodle-less eggplant lasagna last night with the chard, onions and mushrooms...was lovely!

    Cauliflower with garlic -- yum! Chard is one veggie that I haven't integrated into my foods yet. I really have no idea how to use it so it is something I need to learn to eat. I like shepherd's pie (minus the cheese) so I will try that. The lasagna looks good too. Those giant leaves would be good as a layering option. Leaves that size would make a nice wrap, too.
