Hey Jaime- Didn't you make an SCD legal ham a while back? How did you do it? What was the cut of pork you bought? We got a smoker for Christmas and I was thinking I could make a legal ham. I would love to hear your experience. Has anyone else made a ham before?

Yeah, but I wouldn't call it a ham. It was called a picnic ham, but it's basically a pork shoulder. It's the front leg of the pig. I got it for I think only about a dollar a pound. Bone in. People loved it, but it was like a roasted pork, not at all like a ham. I can look up the recipe. I noticed in BTVC that we can have ham if it's cured in salt only, no sugar. No idea where to find that though.

This is the one I used. Subbed in honey for the brown sugar. Guests loved it.
