Quick and easy healthy Chicken and Vegetable Soup (ideal for those with hypertension)

Healthy chicken and vegetable soup. Ideal for those with hypertension.

Ingredients
  • 1 clove garlic
  • Pepper to taste
  • 2 x small carrots
  • 1 x leek
  • 2 x large zuchinni
  • 1 bunch celery (whole) remove leaves
  • 500 gms chicken lovely legs (no skin)

Optional
  • 1 x can cannellini beans rinsed
  • Change to 10 x cups of chicken stock or half water and half chicken stock if there are no hypertension issues
  • 1 x tablespoon of olive oil if your would rather sauté vegetables first before simmering. I used to do this but the results are just as great without this process and......less calories

Method
  • Finely chop all vegetables.
  • Add to large pot with 10 cups of water along with garlic, pepper and chicken lovely legs.
  • Bring to boil, partially place lid on top and gently simmer for 35 mins.
  • Remove chicken lovely legs and using fork pull off chicken which should just come away.
  • Place chicken back in soup and simmer for another 5 mins.
  • Add cannellini beans at this point if desired.
  • Remove from heat.
  • Use a hand processor and blitz until thick.

NOTE: skim top of soup during simmering process to remove any undesirables. Amount of water or stock allows for a scoop or 2 of liquid to be removed.

Makes a large pot and enough for 6 bowls. Lunch done for the week! or use as an in-between craving stopper.

This recipe may seem bland to some but you can always add salt to taste if required.

No more than 150-200 calories a bowl dependent on options used. Celery is not only a natural diuretic it's properties in lowering blood pressure are well documented.
