Ideas for work lunches.......this is where I struggle most.

    Hey there, don't know if you are familiar with doing lunches Bento box style. These have been a Godsend for me. Its very good for portion control. Usually I make mine from leftovers of the night before...two or three ounces of chicken, 1/4-1/2 cup grains such as brown rice, barley, whole grain pasta, quinoa, hummus; 1/2 cup veggies such as baby carrots, spinach, mixed veggies; and then a small serving of fruit. Think of it as a square with a quarter being protein, a quarter being carbs/grains, half being veggies with a small center hole for fruit. I also have containers that have a small container that connects to the lid. I use those for salads. On Sundays I make up five salads and some homemade vinaigrette. I put the salad in the containers and the dressing in the lid containers. Then I put the containers in the veggie drawer of my refrigerator. Each day that I have a salad that morning I add a protein from the night before or pair it with a small can of tuna. Tonight we are having roasted chicken, acorn squash, wild rice, and collard greens. I am making an extra acorn squash. I plan to take some leftover chicken and mix it with the wild rice and collard greens then spoon the mixture into half of a squash. Tomorrow I at lunch I will microwave it and then mix it all together in the neat little bowl the acorn squash creates. It's one of my favorite meals. Deli meat and cheese roll ups are another favorite of mine. I buy the deli meat that isn't processed, roast beef, chicken, turkey, or ham. I like to mix cream cheese with finely chopped veggies, lettuce leaves, or baby spinach and spread a tablespoon of the cream cheese mixture on two or three deli slices and roll them up. One last suggestion, anytime you make soup, make a little extra to put in individual containers and freeze. When you are not sure what to have you can grab one of those and it will be thawed by lunch time. Plus the frozen soup containers double as a freezer pack for other foods that might need to be kept cool. If you don't already have one I would suggest that you purchase a small lunchbox type cooler so that you can pack your lunch and any snacks you may want for the day. For snacks I keep jerky (beef or turkey), cheese sticks, fruit cups packed in juice, yogurt, fresh veggies such as baby carrots, celery, bell pepper strips, cauliflower, or broccoli.
