This is one of my favorite egg recipes. I call it Eggs Ole!

Bake a small corn tortilla at 400 degrees for about five minutes or until crispy. Scramble one whole egg and two egg whites and cook in a pan sprayed with cooking spray. As soon as the eggs are done spoon onto the corn tortilla and sprinkle with about a tablespoon of jack cheese. Top with thin slices of avocado and a spoonful of your favorite salsa. Serve with fresh fruit.
