Nourishing & Warming Omelette

Tasty, Healthy Omelette (with an optional mild+ spicy kick)
Serves medium-large portion for 1. Or 2 people..
2 eggs, milk not necessary
3 cups of mixed chunky vegetables (whatever's going)
Eg broccoli, pepper, large tomato, asparagus,
1 tbspoon coconut oil
1 spring onion chopped/or small amount of normal onion. teeny bit of garlic, chilli and cumin.
(It's easy to say 'I can take it'. a small amount of these are balances for the blood, warming, detoxifying, gets digestion working without sending body into overdrive)
seeds - 3 tbspoons pumpkin/sunflower, 1 tbspoon chia, 1 teaspoon of fennel seeds
for a lovely added crunch, and extra omegas!
How to make..
In a small/medium frying pan of shallow water, throw in the vegetables roughly chopped to similar size. A high temp - then lower to medium
When nearly cooked to 2 3rds/ 3 quarters done to your taste crunchy or cooked, there should be a little water left. Drain a little excess if necessary, perhaps into a herbal tea to save nutrients. Then pop in the onion chilli and egg (pre whisked a bit) and spread evenly. Cook on a medium temp. When egg starting to settle, Put a little coconut oil North, South, East, West to slide down side of omelette. Sprinkle cumin and seeds for a further couple mins till ready.
If it doesn't come out as a perfect omelette due to amount of veg it really doesn't matter, as it's soo delicious and you will just want to eat it straight away. mmm.
you could add cheese, it tastes great as it is.
To add to the warmth, I have a warm cup of Indian,chai herbal tea whilst cooking/after (not sweet, with hot water)
