Banana Protein Pancakes

These pancakes are really good and don't leave one feeling heavy like traditional pancakes. You must use fresh, not over-ripe bananas.

1 Med. Banana
6 Tbsp. Egg Substitute
1/4 C Vanilla Protein Powder
1Tsp. Cinnamon
1/8 Tsp. Nutmeg
1 Tsp. Coconut oil

Heat non-stick skillet to medium-low (4). Mash the banana to a puree in a bowl. Add remaining ingredients and mix well. Spoon into heated skillet cook until edges begin to dry. Turn pancake and cook on other side until it's more spongy in the center. Makes 5 pancakes
