Another Macro Question

Sorry to bring this back but I need a little clarity. So quick question for you about macros. Now what I want to know is which - if any - is more important: (1) Hitting your exact macros or (2) Staying within your macro percentages?
If this isn't clear I will provide an example. My macros are set to 75/20/5 which totals 133g fat, 80g protein and 20g carbs accordingly. I do not always hit 133/80/20 but my percentages will equal something like 72% fat, 21% protein and 7% carbs.
So, I am wondering which is more important? Is there a difference? I am working on getting the hidden carbs down still and will try to get as close to ideal macros as possible, but I wanted to see what others thought.

It's about equally important to say under carb grams, as it is to hit your fat percentage100
So say you normally eat 1200 or so a day. You generally eat, say, 5% carbs and 75% fat. So that's 15g of carbohydrates, and 93g of fat, if my maths is right. But one day you eat 2000 calories. On this day, it would be preferred for you to eat 15g of carbohydrates still, but you don't want to eat too much protein so you want to be eating 166+ of fat.
On a lower calorie day, I'd say that the best thing to do would be meet your 100 grams and eat your protein and carbs at the same ratio (ie you normally eat one gram of carbs for every gram of protein). Obviously this may not work, since 100g of fat is 900 calories so if you ate 600 calories, it would be impossible to meet your fat grams.
