Recipe Vegetarian Chili

I don't know if there is an easy way to copy a recipe over from My Recipes but I made this yesterday, so thought I would share...
I put it in the crockpot, but you could make it on the stove. (6 servings that came out to 254 calories each) for my ingredients.
1 small yellow onion diced
6 celery stalks diced
2 diced cloves of garlic
1 tsp of olive oil (to saute the onion and celery)
1 whole package of frozen Morningstar Farms veggie crumbles (3 cups)
1 can black beans with liquid
1 can pinto beans (no salt added) drained
1 can regular Rotel tomatoes (can use mild if you don't like spice)
1 package of McCormick Taco seasoning (30% less sodium if you want)
Heat oil and slightly brown onion and celery. Add garlic and veggie crumbles and let them get a little brown. If crocking, put in pot and add the beans, Rotel and package of taco seasoning. The ingredients are all cooked so crock on low for at least 4 hours or high for 2 hours. If you don't want to brown, you could probably just throw it all in the crock and cook on low for 8 hours. On stove, you could probably just simmer for 30 minutes or so.
Not included in calorie count but you could add a wedge of laughing cow cheese (or grated cheese) to your bowl, with some cilantro or pico de gallo. I made my own chips out of corn tortillas in the oven that I used to dip in the chili. I thought it was pretty tasty, if I do say so myself!
