My husband created this delicious replica of curried prawns and rice but without any rice. It's only 346 calories for a filling plate of delicious food and it feels like you're eating curried prawns and rice. Very satisfying. This recipe serves 2 people.
Ingredients:
"Curried prawns"
200g green prawns marinated in:
Sprinkle of chilli flakes
Minced garlic, about a teaspoon
Lemon pepper (a good sprinkle)
Squirt of lemon juice
Heat a pan and saute about one tbsp of butter. Add marinated prawns and cook for about 5 mins.
Remove prawns from pan and add one tbsp cornflour and one cup lite milk. Thicken the sauce and put the prawns back in.
Meanwhile: "rice":
Shred sweet potato and zucchini into short "spaghetti" strip to resemble long grain rice. Steam lightly for one minute. Make as much as you feel like eating in one meal (doesn't keep well)
Serve the "rice" into a bowl with a hole in the middle and spoon in the curried prawns.
Serve hot and enjoy!!
