Ok, I did a bit of tweaking, and I'm a bit closer to a 15/25/60 ratio. I'm only going to track for the first week...otherwise I know I'll get obsessed with it!
Breakfast
Hard-boiled (whole egg), 2 large fried in 1 tsp olive oil and 1 Tbsp unsweetened almond milk
Coleman Natural - Uncured Hickory Smoked Bacon, 3 slices
Apples - Raw, with skin, 0.5 cup
Lunch
Weis - 94% Lean Ground Turkey, 4 oz
Cauliflower - Raw, 1.5 cup
Lindt & Sprungli - Excellence 85% Cocoa Extra Dark Chocolate, 2 squares
Dinner
Frozen Shrimp, 4 oz and 3/4 cup squash, 1/2 cup red pepper, 1/2 cup green pepper, 1/2 cup red onion on kabob marinated with 1 tbsp olive oil, spices and vinegar
Fresh - Corn on the Cobb, Boiled or Microwave, 1 ear w/1 tsp olive oil
small salad w/olives and olive oil and balsamic vinagrette
Snacks
Apples - Raw, with skin, 1/2 cup, quartered or chopped
Dole - Baby Carrots, 3 oz.
Generic - Fresh Ground Almond Butter, 2 Tablespoon
1 hard boiled egg
1/8 cup almonds
1/2 88% cocoa bar
I also walked for 60 minutes on my treadmill.
This equaled around 1780 calories with a 25-carb/50-fat/25-protein.
How does anyone fit in 2 pieces of fruit a day and still stay within 15% of carbs? I think I'm not going to worry about my ratios anymore. As long as I'm eating Paleo correct foods the majority of the time, I'm fine with that. I'm also fine with 2-3 pieces of fruit a day and the occasional (maybe 1 time a week) sweet potato.

It looks great to me!! Except corn is a grain, not a vegetable. I had some corn on the cob last night too though lol so NO judgement!! You can't be perfect all the time. You're doing great!!0

IMHO, this is the best way to go about it.
Some days you will eat more fruit and sugary things - for example, myself now, in Winter, I'm finding myself drawn to baked apples and sweet potatoes drizzled in honey for dessert - and others you will crave fat and protein. Whatever works best for you - you're on the right track0
