Question about cauliflower substitutes

So I've been hesitant to try the various recipes because fresh cauliflower is so darned expensive. But most of the recipes I just saw on a video call for steamed cauliflower. Does this mean I can use frozen cauliflower?!?!?! I coykd definitely do that! Does anyone have any favorite or go-to cauliflower recipes? Please and thanks in advance!

    I use frozen cauliflower all the time, well at least 3 or 4 times a week. Here are a few of my favs:

    I also roast them in the oven - after defrosting them with a little oil and Parmesan cheese.
    I tried to make rice once, but it didn't work out. I think I didn't get enough water out of them.

    My guy hates the taste and texture of cauliflower, or so he claims, so I'm looking forward to sneaking some of these in on him. He's loved most of the LCHF stuff I've made so far. :)

    I think for anything you puree or mash frozen is good, but if the end result relies on texture, it has to be fresh. The cauliflower pizza crust did NOT work with frozen cauliflower (oh what an epic fail that was LOL). Haven't tried the rice yet, but looking forward to it as I do miss "fried rice".

    Is it really necessary for cauliflower (or anything) to pretend to be something it's not? Two nights ago I steamed half a head of cauliflower to go with stuffed chicken breasts. It needed some dressing up so I melted some butter in olive oil in a sauce pan and threw in the leftover cheeses I'd sliced for Super Bowl. It didn't look like enough so I added some mozzarella. The texture was wrong so I added some other cheese from the fridge.

    It's taken my wife awhile to come around to the idea that it's not necessary for 1/3 of the plate to be starches but she liked that dish. My problem, I can't duplicate it.

    I use frozen all the time. It's less time chopping.

    Just wanted to say last night I had some fresh cauliflower left over from roasted vegetable chunks in olive oil. ( Not to change the subject but the roasted veggies turned out very tasty when salt and peppered.) Anyway, I saw someones post about making fake potato salad with cauliflower subbed for the potatoes. I used mayo, touch of mustard and sweet pickle relish, chopped HB egg, and bacon crumbs. WOW! Very tasty and satisfying. My husband who is very picky was amazed how good it was. Thank you for the ideas!

    @shadesofidaho‌ I make lots of stir fries that have Chinese flavors. You just have to use your preferred oil to saute in, and add something with more fats to the end, or fat bomb after. Hasn't bumped my carbs up, and with good veggies, no need for rice, and add chopped nuts for crunch (I prefer almonds). I've done this several times and let my guy eat all the rice stuff...lol. Works great. Depending on the sauce, you could add sour cream or heavy cream, use natural or your preferred sweetener for certain sauces, but it's worked so far...

    This way of eating really can change your tastes so it's a good idea to try things you didn't like before. For instance turnip greens (or really greens of any type) I actually enjoy now

    I despise steamed cauliflower as a side vegetable, massive texture issues there, and the taste is at best slightly negative. We've made some cauliflower rice/rissoto recipes a number of times though and that I find I really enjoy. I was surprised given how strongly I dislike plain old cauliflower.
