I finally was able to afford some coconut oil, but haven't found anything I could use it in yet. I wanted to make some chocolate fat bombs, but all the ones I found used shredded coconut (which I cannot stand) or peanut butter (not a fan at all).... Anyone have any suggestions? I really liked Dan's chocolate bomb with cocoa butter, but after the expense of buying coconut oil, I can't afford cocoa butter, too. I was looking at lemon bombs, but they all include either fresh lemon (don't currently have), lemon extract (which I can only find with a ton of added sugars), or some other random ingredient I don't have. I was so frustrated this weekend spending an hour on pinterest and the net. *sigh*
And I'm not knowledgeable enough yet to know what I can swap for what, and in what ratios here...
Just go with a basic -- coconut oil, maybe some butter, cocoa powder (or crushed dark chocolate), cinnamon, a sweetener if needed, any other fatty additives that sound good. Soften the fats, mix everything together, toss into molds or on a cookie sheet (if it can still hold its shape) and toss in the fridge or freezer to set up.
I will try to find a fat bomb recipe somewhat close and test. If you know of any ballpark numbers to start with for ratio of coconut oil and butter, I'd love to know. Cocoa powder and cinnamon sounds AMAZING... I'm just trying to find something with less dairy to have earlier in the day, because interference with Metformin by having dairy that close to taking Met (8 am usually) causes the liquid bathroom sprints the remainder of the day, and I'd really love to get rid of those!

The only ones Id know of are the Creamcheese clouds, one stick of butter, one brick of cream cheese, 1/2 cup (more or less depending on your tastes) and a flavoring extract. Its cheap, easy and quick. Freeze them for a frozen treat but they are also good in the fridge.

Hmmmm. Problems with Metformin? Lets chalk that up to, "everybody-is-different". I have been taking Metformin for 15-16 years and don't have any problem with it. Every once-in-a-while, if I ran out of it for a couple or few days, then started taking it again, it would give me diarreah, but that would go away once I got back-on-track. Since I have been Keto, that's the only med I take now, I was taking both insulins and Glipizide. I take 800 mg of Metformin @ day now.

did excess carbs bother you? I wonder if it has to do with the hormones that are crazy for us PCOS ladies, or if it has to do with the 1500mg a day a lot of us are on. Met seems to be a big problem for many of us PCOS, so it is good to hear that's not everyone has those issues.
If I eat too may carbs, i have Met problems. If i drink a lot of milk, I have a lot of Met problems but other dairy doesnt affect me. If i miss a dose, the next dose will send me potty all day long the next day. It is annoying.0 -

Yeah, unfortunately, Metformin will sometimes be hyper-reactive in some people. It's quite common, but sucks like hell. I was on 2000mg of extended release until I threw in the towel, because I couldn't so much as eat fiberous vegetables without dealing with some insane GI side effects. And that was after being on it for more than a year. Suffice to say, I got sick of it nuking my gut on a daily basis.
Usually, just dropping carbs below SAD levels, and dropping the refined crap, will settle the side effects, but every so often, even that's not enough.

About the third one down looks like it might work for you. No cream cheese but it does have butter. Does it count on your dairy?

I don't have the problem with all dairy. Butter seems to be okay, and I've been told because it is almost free of the type of dairy (whey maybe, don't remember) that is more carb heavy and reactant to the Met. I also do not have a gallbladder. I didn't have this conflict before Met. Also, I am not diabetic, and have never even been classified as pre-diabetic, but it runs in my family as adult onset type 2. I have always had some form of reaction to the softer cheese (cream, sour, cottage, and even milk), usually making my sinuses get all mucus-y, but most of that reaction is gone now that I'm low carb and only do HWC, not milk. The others are usually mixed with a less troublesome type of food.
But, when I wasn't watching my carbs, in order to keep from the dreaded D all day long, I'd have to carb load with things like crackers to make it work. Dropping my carbs to 20-50 g range, I had almost no side effects unless I had too much dairy before lunch. I only take one 500 mg er tablet daily, at around 8 am. My blood work didn't support the diagnosis of insulin resistance, but all my symptoms did, so the endo wanted to try it. It was sincerely almost instant relief of my worst symptom (yes, first dose, a few hours, I would literally all but pass out after eating, I jokingly dubbed it food narcolepsy because it was the only set of symptoms even close to what was happening, but I never meant it as an insult to true narcoleptics). The sleep/digestion mode was gone. It was bliss.
But that was long before I was ever brave enough to follow the LCHF suggestion. Since I've done that the met works better in and of itself. I have far less food reactions (just the "softer" dairies in the am). I think I even managed to miss two days of meds last week, because on Monday I counted doses and should have been out by Thursday, but I still had pills to go through Saturday. If I missed the doses and didn't have effects, I'm wondering if I still need it.
But I'm going to wait for bloodwork and/or doctor advice to stop, unless something weird happens between now and then. I'm also on thyroid meds, and having calcium closer than 4 hours to taking the meds can interfere with absorption, though cheese and bacon/pepperoni is an awesome breakfast, I must say.
And honestly, hoping not to be too much TMI, but my big D, when it hits, very quickly because almost a straight bile dump and is much more than an inconvenience. It burns and can end up causing bleeding and such if untreated, so I try to avoid it whenever possible. I think the "bile dump" reaction is more indicative of not having a gallbladder than the Met complication, but they tend to feed off each other in me.
Also, I've been on it less than a year. I would pray that you're far better adjusted to the side effects after more than a decade! Thanks for the info.0 -

My whole body is a complicated mess. But the more I am finally accepting and embracing these way I need to eat to support the way my body functions, the more I am finding out that the mess is related more to all the ways I've unintentionally abused my body in the last 20 years.
Some parts of my are still quite weird, according to most, but I'm discovering that most of it is just the unique ways my body developed coping mechanisms. I'm hoping to get back to a more normal normal sometime this decade! LOL
I honestly wish I'd know about LCHF/Keto almost 15 years ago when I developed gall stones. I might have been able to avoid having to remove my gallbladder. Maybe then my complications would be less problematic.
But above all, thanks for the well wishes. Amazingly enough - all that ^^^^ mess is 100 times better than I was 5+ years back!!
